If you’re missing that ‘pumpkin spice and everything nice’ from back home or want to host a “Friendsgiving”, you don’t need a ton of space or  to break the bank! Here are a few simple recipes for you enjoy with your friends- whether you’re in closet-sized forced triple or a more spacious suite! (Added bonus: none of these recipes require technical equipment beyond a microwave!) Chicken Pot Pie: Don’t worry- you won’t need to cook any raw meat! For this recipe you can use a pre-cooked rotisserie chicken or frozen chicken/ poultry.

Ingredients:

  • 2 cups frozen mixed vegetables
  • 2 cups shredded, cooked rotisserie-style chicken or turkey breast
  • 1 can of condensed cream of chicken soup
  • 1/3 cup milk (any kind, but skim works well)
  • 2 cups croutons (any flavor, but garlic works well)
  • Knife
  • Microwave-safe dish
  • Water  

Steps: Thaw out chicken (follow heating instructions on box) or cut up rotisserie chicken and warm for 1-2 minutes in microwave. Then put the chicken on a separate plate and pour the mixed vegetables into a microwave-safe dish. Thaw in microwave for 2–3 minutes. Put croutons to side. Remove dish from microwave. Add all other ingredients except croutons. If too thick, add some water. Cover dish. Then put in microwave on high for 8–10 minutes. Take out and stir while cooking. Take out of microwave. Crumple croutons. Add crumpled croutons to top. Put back in microwave for 30 – 60 seconds. Take out and let your delicious pot pit sit for 5 minutes! Sweet Potato Pudding: Ingredients:

  • 2 large sweet potatoes
  • ¼ cup brown sugar
  • ¼ cup maple syrup
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • ½ teaspoon vanilla extract (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • 1 cup mini marshmallows
  • Microwave-safe pan
  • Knife or potato peeler
  • Spoon (preferably metal)

Steps: Grease microwave-safe dish with butter. Peel the sweet potatoes with the peeler, place in pan and nuke in microwave for 1-2 minutes. Then mash the sweet potatoes using the spoon. Make sure potatoes are smooth. Put marshmallows to side. Mix all other ingredients (except marshmallows) together. Microwave on high for 6–8 minutes. Take out and stir while the pudding is cooking. Then take out, top with marshmallows and cook for additional 2–3 minutes. Let cool for 5 minutes. Then dig in!

Jell-O Parfaits:

Jell-O can be found in a variety of flavors in most grocery stores.

Ingredients:

  • Pre-packaged Jell-O mix
  • Water
  • Mug
  • Bowl (microwave safe)
  • Spoon
  • Whip cream (optional)
  • Fruit (optional)

Steps:

Put water in mug and heat in microwave on high for 6-8 minutes. Put Jell-O powder in bowl. Add the hot water and stir. Leave in fridge, covered overnight (or until solid). Add favorite fruit and whip cream for an extra flair!
