Dark Chocolate Poms

Ingredients:

1/2 c. dark chocolate chips, melted

1 1/4 c. pomegranate seeds

 

Directions:

Line a mini muffin tin with liners. In each cup, add 2 teaspoons melted chocolate. Sprinkle pomegranate seeds on top and drizzle with more melted chocolate.

Refrigerate until chocolate is firm, 20 minutes.

Unwrap and serve.

Fro Yo Bites

Ingredients:

1 1/2 c. plain yogurt

1/4 c. whole milk

2 tsp. honey

1/2 tsp. pure vanilla extract

1/2 c. blueberries

1/2 c. strawberries, quartered

1/2 c. raspberries

 

Directions:

In a medium bowl, combine yogurt, milk, honey and vanilla and whisk until smooth.

In an ice tray, distribute fruit in each of the cube molds.

Spoon yogurt mixture over fruit, filling molds completely. Freeze for 5 hours, or until frozen solid.

Fruit Nachos

Ingredients:

1 pear

1 apple

6-7 strawberries

1/4 cup semi-sweet chocolate chips

1/4 cup caramel

1/4 cup coconut flakes (I used shaved, but you can also you shredded)

 

Directions:

Slice your apples and pear in halves.  I sliced mine pretty thin because my girls have an easier time eating them when they are thin.

Next chop your strawberries into small pieces.  Sprinkle onto the apple and pears.

Melt caramel and chocolate in separate bowls.   Place in a microwave safe bowl and heat in increments of 30 seconds on a lower power level.  I did power level 5 on my microwave.  Stir and heat until melted.

Drizzle onto your fruit.

Sprinkle with coconut.
