If you’re like most college students living off campus, making dinner is always dreaded after a long day. So if you’re sick of making pasta every night for dinner, now is the time to switch it up. Keep reading for some info on a super yummy and nutritious evening meal alternative!

1. It is so easy to make. You literally preheat your oven to 425 F, cut it in half, scoop out the seeds, add olive oil, salt and pepper, put it on a tray face down, and check back in in 45 minutes. Then add whatever ingredients you want, and (get this, you don’t even need a bowl) just grab a fork and dive right in!Â

2. It is such a good fall/winter food. When you cut open the squash it instantly smells like you’ve been carving a pumpkin. Light a candle, throw a big sweater on, and get in the fall feels with that fresh squash.Â

3. You can do so many different things with a spaghetti squash. If you’re in the mood for Italian, add some pesto and fresh tomatoes. Or maybe you’re just feeling a classic garlic and herb kinda night. You can even go the southwest route if you’re feeling risky and make a little Mexican bowl. Who needs chipotle, right? (Sorry, that was extreme.)

4. You can indulge guilt free! I am not kidding, when you spice up your spaghetti squash with your choice of fixings it actually tastes like pasta. I swear you will completely forget that you’re eating an awesome, low calorie veggie.Â

5. Last but not least, for all my gluten intolerant babes, spaghetti squash is GF!! Even for those who are not, this is a fun and easy way to reduce our intake here and there. Now this way you and your GF bestie can make a bomb dinner together.Â
