5 Super Easy Vegan Recipes 

 

I love cooking, but I don’t love how intimidating and time consuming it can be sometimes, especially when there are SO many recipes out there. That’s why I found a few this week, tried them, and am sharing with you! These recipes are healthy, delicious, and won’t keep you in the kitchen for too long. Oh, and did I mention you don’t have to be a master chef either?!  

I follow a vegan diet, but if you don’t, that’s cool too! Some have dairy alternatives that are easy to swap for real meat or dairy, and you can always tweak the recipe to meet your needs. Happy cooking and enjoy! 

 

MUSHROOM PASTA WITH SPINACH

This can be made with one pot (with exception of the noodles) and was TASTY. Seriously, if all you have is 20 minutes, I highly recommend this.  

 

SWEET POTATO BLACK BEAN CHILI

 Yes, I know, step 4 calls for an immersion blender or similar, but I have a solution! I made lentils, mashed some, and added it to the chili, which worked perfectly to thicken it up. This is a great one for non-vegans to try on a Meatless Monday! 

 

 

 

TERIYAKI TOFU

This recipe is very easy to make, and if you aren’t vegan, just switch the tofu to chicken! It is already super flavorful, however, I added sesame seeds and it was great! 

 

MEXICAN QUINOA WRAPS

These are the bomb dot com. They are so versatile and delicious! Swap quinoa for rice, peppers for salsa, or just add whatever you like! I added a bit of lime juice which added enough citrus to elevate the flavor! 

 

CRISPY GARLIC HERB POTATO WEDGES

I loved how easy these were! If you are super lazy like me, I just used the McCormick Garlic Herb, black pepper, and sea salt seasoning mix and it tasted SO good. There are no limits to these! Not to mention, potatoes are a great side dish or carb for your charcuterie board.
