If you’re like me and you struggle to figure out dinner ideas for the week, I’ve got you. I’ve learned some easy dishes that take no effort and are really good. I love chicken and eat it a lot, so if you’re like me, this one is for you. I usually cook the chicken in the crock-pot for the day, so that’s what I’ll be highlighting. You can cook the chicken any way you want.Ā

Chicken pesto pasta/gnocchi

I like gnocchi rather than regular pasta noodles, so I like to use it when I’m making chicken pesto pasta. I also like to use the crock-pot a lot, so I’ll usually put chicken in the crock-pot for the day, and then I come back, and I boil the gnocchi, heat any vegetable I’m using and then just throw it all together in one big bowl. I also like to keep a cup of pasta water to mix in with it all to make the pesto go more smoothly.Ā

Ingredients:

  • Your favorite pastaĀ
  • A jar of pesto sauceĀ
  • Any vegetable of your choice (I like edamame)
  • Chicken breast

Teriyaki chicken with rice and broccoliĀ

Again, I’m a big fan of the Crock-Pot, so I’ll usually put the chicken in there for the day. Later,Ā  I will start heating the rice and put the bag of frozen broccoli in the microwave for around 5 minutes. Then it all just comes together in a big bowl as well with the teriyaki sauce.Ā

Ingredients:

  • Chicken breast
  • Teriyaki sauceĀ
  • Bag of frozen broccoliĀ
  • Instant riceĀ

Chicken Caesar wraps

Cook your chicken whichever way you like. Classic chicken Caesar wrap that is always so good!

Ingredients:

  • Chicken breastĀ
  • Mozzarella cheese
  • TortillasĀ
  • Caesar sauceĀ
  • LettuceĀ
  • Fettuccine Alfredo with chickenĀ

Chicken quesadillasĀ

You can either put the chicken in the crock pot for this or do it whatever way you would like, but you’re going to end up cooking on the stovetop as well with the wraps. I like to have the chicken ready, and then you butter the pan, put the tortilla down, and fill it with cheese and chicken and whatever else you’d like. Put another tortilla on top, let it simmer and then flip it.Ā

Ingredients:

  • Chicken breastĀ
  • Cheddar cheese or whatever you prefer
  • TortillasĀ
  • Any other ingredients you’d likeĀ

Chicken fettuccine alfredoĀ

My last easy one is chicken fettuccine Alfredo. It’s literally just heating the sauce, the noodles and chicken. I like to add broccoli, too.Ā

Ingredients:

  • Chicken breastĀ
  • Fettuccine pastaĀ
  • Fettucini sauceĀ
  • Frozen broccoli
