THE BEST RECIPES TO TRY THIS SUMMER

Summer is basically the main character season, especially for the girls. Everything feels brighter, happier and a little more fun. It’s the time for iced drinks, fresh fruit and recipes that look just as cute as they taste. Whether you’re planning a picnic, beach day, tan session or just a chill afternoon with friends, the right snacks can make it feel even more special. From sweet treats to refreshing bites, these fun and easy recipes are perfect for adding a pop of color and a whole lot of flavor to your summer days:

Peach Honey Summer Salad:

Ingredients for salad:

  • Arugula 
  • 1 peach (diced)
  • 1 heirloom tomato (diced)
  • Chopped basil
  • Burrata cheese (chopped)
  • 1 shallot (diced)
  • Orakube pecans

Dressing:

  • 3 tbsp of olive oil
  • 3 tbsp of balsamic vinegar
  • 1 tsp minced garlic
  • 1 tsp dijon mustard
  • 1 tsp honey
  • Sprinkle of salt
  • Sprinkle of black pepper

Preparation:

In a bowl, add arugula over the diced peach, diced tomato, burrata cheese (chopped), diced shallot, praline pecans and a sprinkle of basil. In a bowl, add olive oil, balsamic vinegar, garlic, mustard, honey, salt and pepper. Mix well, drizzle all over the salad, stir it all together and serve!

Chocolate Covered Strawberry and Yogurt Clusters:

Ingredients:

  • Strawberries (chopped)
  • 1 cup of yogurt of your choice
  • 3-4 tbsp of honey or agave
  • 1 tsp of vanilla extract
  • 1 cup of chocolate chips of your choice
  • 1 tbsp of coconut oil

Preparation: 

Mix the yogurt, honey and vanilla together. Then fold in the chopped strawberries. Scoop into clusters and freeze for 1-2 hours. Once they are frozen, coat the clusters in the melted chocolate. Lastly, place back into the freezer for another 10 minutes and enjoy!

Fruit Sorbet:

Ingredients:

  • Frozen fruit (this can be just one or a few)
  • Lemon juice
  • Maple Syrup (or any sweetener)

Preparation:

Place all of the ingredients together in a blender or food processor. Blend until it’s fully combined and smooth. Then pour into a dish and freeze for 30+ minutes. Serve and enjoy!

Acai Bowls:

Ingredients:

  • 1 packet of unsweetened acai puree (or 1-2 tsp of powder)
  • ½ cup of frozen blueberries and strawberries
  • 1 frozen banana
  • ÂĽ or ½ cup of milk or juice
  • ÂĽ cup of plain yogurt (optional)
  • Toppings: granola, seeds, nuts, honey, fresh fruit

Preparation:

Freeze fruit (if not already frozen), then blend everything (acai, fruit, milk, yogurt) until thick and smooth. Finally, pour into a bowl and add your choice of toppings. Eat up and enjoy!
