Let’s get real for a second. Cooking is hard. I don’t know what gene girls have that translates into the ability to cook, but I don’t have it.  To help myself and other kitchen nightmares, I compiled a list of nine snacks/meals that can be made in a muffin tin. Hopefully, I don’t set anything on fire when I test these out! :) 

Bacon and Egg Breakfast Bites 

Things you’ll need: 

  • bacon 
  • eggs 
  • cheese 
  • seasoning (optional) 

Directions: 

  • Cut bacon strips in half and place them in a criss cross fashion in the muffin tin (as pictures above)
  • Crack an egg on top of the bacon
  • Add any seasoning you enjoy (ex. salt and pepper) 
  • Cook at 350 degrees F for 10-15 minutes 
  • Add cheese upon removal from the oven

These are a great breakfast item to munch on on your way to class! :)

 

Eggs in Ham Cups 

Things you’ll need:

  • Eggs 
  • Ham 

Directions: 

  • Place two slices of ham in each cup
  • Scramble eggs in a separate bowl and pour into your ham cups 
  • Cook at 400 degrees F for 10 minutes 
  • Enjoy! 

 

Hashbrown Cups 

Things you’ll need: 

  • 1 pound of potatoes or a bag of shredded potatoes
  • Grated Parmesan cheese
  • Salt
  • 2 Green Onions 
  • 2 tablespoons of Olive Oil

Directions: 

  • But your shredded potatoes into a large mixing bowl
  • Chop your creen onions
  • Measure out a cup of grated Parmesan cheese
  • Measure 2 tablespoons of olive oil
  • Mix cheese, onions, and olive oil into the large bowl containing the shredded potatoes
  • Spoon mixture into muffin tin cups
  • Cook at 300 degrees F for 30 minutes

 

Loaded Smashed Potatoes

Things You’ll Need: 

  • 1 pound potatoes (about 1-1 1/2 inches across)
  • 2 tablespoons of vegetable oil
  • salt and pepper 
  • 2 strips bacon (optional)
  • 1cup cheddar cheese, shredded
  • 1/2 cup sour cream

Directions: 

  • Place one small potato in each muffin cup. Smash down with a spoon. 
  • Add vegetable oil and seasoning to each cup
  • Cook at 450 degrees F for 20 minutes
  • While that’s cooking go ahead and cook the bacon strips
  • Once they’re cooked, crumble them into ‘bits” 
  • Remove potatoes from the oven
  • Add sour cream, cheese, and your bacon bits to each cup 

 

Mini Corn Dogs 

Things You’ll Need: 

  • Pillsbury Dinner Rolls
  • Hot dogs

Directions: 

  • Pop open your dinner rolls
  • Line each cup with the dough
  • Place hot dog slices in each muffin tin cup
  • Cook at 375 degreed F for 8-12 minutes 

 

Mini Taco Bowls 

Things You’ll Need: 

  • 1 lb Ground Beef
  • 2 tablespoons Taco Seasoning
  • 1 diced tomato
  • 6 Jalepeno slices
  • 12 corn tortillas
  • shredded cheddar cheese

Directions: 

  • Brown ground beef
  • Dice jalepenos and add to beef
  • Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed
  • Heat each corn tortilla in microwave to soften
  • Cut 2 inch circles into each tortilla
  • Place each cirlce into a muffin tin cup 
  • Cook in oven at 350 degrees F for 12 minutes
  • Once you remove from oven, fill each shell with taco meat
  • Place cheese and tomato on top of taco bowl (optional)

 

Monkey Bread

Things You’ll Need: 

  • 2 cans of Pillsbury crescent rolls
  • 1/2 cup of sugar free maple syrup 
  • 1 tablespoon of butter
  • 3 tablespoons of cinnamon 
  • 2 tablespoons of sugar

Directions: 

  • Open the cans of dough
  • Separate each triangle into three small balls of dough
  • Mix your sugar and cinnamon into a bowl 
  • roll each ball of dough in the mixture until fully coated
  • Melt the butter in the microwave for 30 seconds
  • Add syrup and 1 tablespoon of cinnamon to the butter
  • Place 4-5 balls in each muffin tin cup 
  • Pour your melted butter mixture on top of each cup 
  • Cook at 350 degrees F for 15-20 minutes

 

Cookie Cupackes

Things You’ll Need: 

  • 1 package of plain chocoalte cake mix
  • 1 1/3 cups water
  • 3 eggs
  • 1/3 cup vegetable oil 
  • 1 package of cookie dough
  • 1 16 ounce container of chocolate frosting 
  • 1 pacakge of chocolate chips

Directions: 

  • Beat cake mix, water, eggs and oil in large mixer bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes or until smooth. Spoon about 1/4 cup batter into each prepared muffin cup, filling about two-thirds full. 

  • Place one ball of cookie dough into each muffin tin cup 

  • Cook at 350 degrees F for 20 minutes. 

  • Spread frosting on top

 

Mini Deep Dish Pizzas

Things You’ll Need:

  • Olive oil, for muffin pan
  • Pillsbury pizza dough
  • salt and pepper
  • 1/2 cup shredded mozzarella (4 ounces)
  • 1 large tomato, coarsely chopped
  • Desired toppings, such as cooked vegetables, pineapple and ham, or pepperoni

Directions: 

  • Add olive oil to muffin pan so the pizzas won’t stick
  • Place rolls of dough into each muffin cup
  • Add salt and pepper to each cup
  • Add mozzarella and other toppings (ex. pepperoni, tomato, vegetables) 
  • Add another layer of cheese on top of toppings
  • Cook at 450 degrees F for 12 minutes
