Easy Spring Produce Recipes

As the temperatures increase, so does the amount of local produce available. Being in Hamilton, NY allows us students ample access to fresh, local produce, so let’s use it! The weekly farmers market on the village green resumes in May and supplies the Hamilton community with a wide array of fresh veggies and fruit. Even if you can’t make it to the farmer’s market, the produce in these at Price Chopper will be fresher as they are in season! With that in mind, here are some recipes to utilize the fresh produce!
 
According to Food & Wine Magazine, apricots, artichokes, asparagus, avocados, carrots, chives, leeks, mangoes, peas, pineapples, rhubarb and spinach are in-season now. Below are a few recipes that call for a few of the listed produce items that are easy to make. Enjoy!
 
For a quick (less than 10 minutes!) asparagus recipe, try this! Asparagus paired with potatoes is a popular combination. Also try asparagus as a side with seasoned chicken!
