Attention all students- I think I have the answer. 

A little while ago, my suitemates and I decided to purchase a hot plate for $30 bucks off amazon. This hot plate is advertised as the catalysts to all sorts of scrumptious creations- stir fry, grilled cheese, eggs, but most importantly, PANCAKES. Pancakes, we’ve discovered, are the ultimate dorm snack. They’re perfect for when you’re craving something sweet, but filling, but still not too unhealthy. Not to mention, they’re WARM (fyi, the weather has been freezing). The brand Kodiak makes a pancake mix that has an insanely high amount of protein. As a suite full of athletes, this is crucial. Basically, pancakes just got healthy. Now you might be thinking that making pancakes is a pretty arduous task, and you might already be thinking about the dishes you’ll have to wash before you even start. However this mix genuinely couldn’t be any more idiot proof. All you have to do is add water and BOOM, you’re in action. While Kodiak offers a variety of different batter flavors, my roommates and I have embraced our inner Guy Fieri and have come up with a few go-to variations of our own. 

 

1. Dark Chocolate Chip

Dark chocolate kodiak mix + Lily’s unsweetened sugar free dark chocolate chips 

2. Pumpkin Chip *(my favorite)

Pumpkin kodiak mix + Hu dark chocolate chunks 

3. Funfetti

Buttermilk kodiak mix + rainbow sprinkles 

4. Chocolate Cupcake 

Dark chocolate kodiak mix + rainbow sprinkles + shredded coconut 

5. Cinnamon Oat 

Cinnamon oat kodiak mix + bob’s redmill oats 

6. Lemon Chia 

Buttermilk kodiak mix + chia seeds + agave 

7. Peanut Butter 

Buttermilk kodiak mix + sugar free powdered peanut butter 

8. Chocolate Peanut Butter 

Dark chocolate kodiak mix + sugar free powdered peanut butter 

9. Spirulina 

Buttermilk kodiak mix + spirulina powder + agave 

10. Matcha 

Buttermilk kodiak mix + matcha powder 

11. Banana Chocolate Chip 

Chocolate chip kodiak mix + sliced bananas 

12. Peanut Butter Chip

Peanut butter kodiak mix + Lily’s unsweetened dark chocolate chips 

 

Needed: 

  • Hot plate 

  • Large mixing bowl 

  • Spoon (or whisk) 

  • Spatula 

  • Nonstick spray 

Or: 

You can make big ones and top them with melted almond butter and granola 

 

The Moral of the Story:

  • If you’re happy = pancakes :p

  • If you’re sad = pancakes =)
