Fall is the time of the year where the weather begins to cool, leaves change colors, and a lot of creative dishes begin to appear. Most dishes include turkey, sweet potato pie, and stuffing. However, as a college student we are living on a budget and cannot replicate the more common meals. So here are four dishes you can make at home on a budget to have your own little taste of fall in your room/apartment.

1. Fettuccine with Sausage and Kale

This pasta dish will make a great Friday night dinner after a long week of studying and working. The pasta will be filling and for those who do not eat pork, turkey sausage is a great substitute.  Adding kale is not only a healthy additive but adds a kick of spice to this dish.

2. Carrot and Apple Salad

For those of you who are looking for a healthy, yet flavorful salad then this carrot and apple salad is the best choice. With fresh hearty carrots, apples coated in cinnamon spices, and crunchy walnuts this salad will fulfill all your crunchy needs. You can serve it as an appetizer or better yet as a filling breakfast to last you throughout the morning.

3. Roasted Chicken and Cauliflower

This dish here will give you an early Thanksgiving teaser. By roasting either whole chicken breast or leg quarters with cauliflower, this dish here is a perfect dinner choice to give you the true fall season taste. This is a perfect Thursday night dish to serve for friends during the nights your favorite television shows such as Scandal or Grey’s Anatomy.

4. Butternut Pudding

Squash doesn’t always have to be savory or used as a side dish. This dish here shows how squash can be used as a dessert instead of the typical pies. With the addition of maple syrup, cinnamon, sugar, and nutmeg overpowers the strong tastes of squash and replaces it with a sweet, smooth taste to end off any dinner.
