If you’re celebrating with your friends in a dorm room (or even if you’re lucky enough to be heading home for the weekend) you still deserve to have a pleasant day this Easter Sunday. Let’s focus on the traditions you can still participate in, no matter where you are or who you’re with. The following are some of the yummiest and healthiest bunny day inspired recipes out there…with plenty of chocolate included.

Homemade Trix yogurt: 

1) Mix half a container of Choban yogurt with 2 Tsp of blueberry jello powder and mix the other half with 2 tsp of raspberry jello powder. Chobani has 18g of protein and twice as much yogurt in the container.

2) Freeze overnight.

3) For lower calories and sugar you can use sugar free jello powder.

Almond (or peanut) butter crunch cake:

1) Start with Quaker Rice Cake

2) Add your favorite spread and enjoy! Almond butter single packets usually have about 135 calories 

Chocolate-Strawberry Toast: 

1) Slice 3 medium sized strawberries

2) Spread an even amount of Nutella on a piece of 100% whole grain toast

3) Enjoy!

Grab-N-Go Cereal bars:

1)   Spray a microwave safe bowl along the inside with cooking spray

2)   Combine your favorite breakfast cereal and 2 tbsps of marshmallows in the bowl

3)   Microwave for 30 seconds.

4)   Mix together cereal and marshmallows until they are combined

5)   Let the mixture sit in the bowl for 1 – 2 minutes so the marshmallows can harden up.

6)   Take your hands and run them under water to keep the mixture from sticking to your hands.

7)   With your hands grab the cereal mixture and start to form into a rectangle

8)   If they are not sticking together let the marshmallows harden more or run your hands under water again. 

S’more Oatmeal: 

1) Microwave 1/3 cup whole grain oats with 1/2 cup of water for one minute on high

2) Add in 1 Tsp ground cinnamon

3) Top with 1/2 Tbsp mini dark chocolate chips, 1 cut up jumbo marshmallow, and 1/4 of a large whole grain graham cracker

4) Stir and enjoy!
