Skinnylicious Cinco de Mayo

Our favorite holiday is coming up, Cinco de Mayo. It’s the one holiday you can drink a whole bottle of Jose Cuervo and not be looked as if you were a crazy person. Of course we all want to be festive and indulge in the Mexican food, especially to offset that tequila taste, but it’s hard to keep that summer bod when you are chowing down on the burritos. So I’ve come to help keep that waist slim but still enjoy your Cinco de Mayo to the fullest!
 
1. Skip on the chips!
 
Yes we all know how good that homemade guacamole can taste, but the chips that come with that bowl of goodness are the devil. They can pack on more than 800 calories and 30 grams of fat! (Chipotle Guacamole and chips) So try to hold back on the mindless guacamole dipping and try to put a spoonful or two on your tacos instead!
 
2. Low Cal Margaritas
 
Tequila straight with a lime wedge and salt is probably your best bet for today, but if you want to get fancy and have a margarita instead here is a great alternative for the drink.

3. Skinny Taco Dip
 
Make an easy low cal Skinny Taco Dip, this is the easiest dish to make and feeds an army! You’ll feel better about it. Use either no salt tortilla chips or whole wheat tortilla flats to be extra good!

  • 8 oz 1/3 less fat Philadelphia cream cheese
  • 8 oz reduced fat sour cream
  • 16 oz jar mild salsa
  • 1 packet taco seasoning
  • 2 cups iceberg lettuce, shredded
  • 2 large tomatoes, diced
  • 1 cup reduced fat shredded cheddar cheese
  • 2.25 oz black olives,

In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, shredded cheese and black olives. Serve with baked tortilla chips.

4.Spice it up with Skinny Fajitas!       
 
Skip out on Chili’s fat loaded fajitas and make your own on Cinco de Mayo! It’s a great Mexican option without being loaded with cheese and fat.

Calories:192.1 • Fat: 5.5 g •Carb: 16.7 g •Fiber: 8.3 g •Protein: 25.5 g 

  • 16 oz boneless skinless chicken breasts
  • 1 bell pepper, cut into strips
  • 1 poblano chile, cut into strips
  • 1 onion, cut into strips
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ancho chile powder or chipotle chili powder, to taste
  • salt and pepper to taste
  • 2 tsp olive oil
  • 4 low fat, low carb tortillas (La Tortilla Factory)

Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.

Season vegetables with salt and pepper and toss with olive oil.

Heat George Forman grill. Grill chicken until well browned, but not hard to the touch. Transfer to a plate when done. Cut into strips.Grill vegetables until tender (about 15 minutes). Once cooked, combine with chicken. Serve immediately with tortilla and toppings.

Optional 0 point toppings: Salsa, chopped serrano chiles, chopped fresh cilantro, sliced green onions.
