Dishes ‘n’ DIYs: Greek Yogurt Chicken Salad Wrap

This may look like your average chicken salad wrap from the outside, but it is quite different, collegiettes. I present you with the ultimate basic college girl recipe: Greek yogurt and chicken salad together in a wrap. All that’s missing is a caramel Frappuccino on the side. The rising popularity of Greek yogurt over the past few years has influenced many to substitute out unhealthy mayonnaise for this godly protein-packed yogurt. Give your college-budgeting wallet a break from eating out every day, and make your own lunch every so often. The salad mixture may not exactly look pretty on the outside, but don’t judge a book by it’s cover, am I right?

 

What you’ll need:– 1/2 pound cooked and sliced chicken breast- 1/3 cup diced apple- 1/3 cup halved grapes- 1/4 cup sliced almonds- 1/4 cup dried cranberries- 1 stalk chopped celery- 1/3 cup plain Greek yogurt- 1 teaspoon lemon juice- salt and pepper- 1 large whole-wheat tortilla

How to make it:1. Mix the chicken, apple, grapes, almonds, cranberries and celery in a bowl.2. Stir the Greek yogurt, lemon juice and a sprinkle of salt and pepper in a separate bowl.3. Combine the two together, and spread the mixture onto the center of the tortilla in a line.4. Add extra lemon juice and salt and pepper for more flavor if needed, or add extra Greek yogurt for a thinner consistency if desired.5. Roll up the tortilla into a wrap, and enjoy!

Who cares if we get called basic? This recipe is worth it. It makes for a quick and easy chicken salad wrap to eat on the go or before class. Not only is it delicious, but it’s also high in nutrients, low in calories and extremely satisfying. It’s pretty much the Superman of lunch food. You won’t regret giving this recipe a try, so get wrapping, collegiettes!
