It’s almost the weekend Collegiettes! It’s time to relax, hang out with friends, and kick those feet up after a stressful week. What better way to do that than to prepare some comfort food?!

1. Cauliflower bites 

A delicious way to enjoy cauliflower is this appetizer recipe!

Ingredients:

  • ½ head cauliflower, stems trimmed short and cut into bite sized pieces
  • ½ cup flour
  • 2 eggs, beaten
  • ¾ cup Panko bread crumbs
  • ¼ cup Romano cheese, grated
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Oil for frying

Instructions:

– In a medium sauce pan heat 1½ – 2 inches of oil to 350 ̊.

-You’ll need three shallow bowls or re-sealable containers. Put the flour in the first one. In the second, beat the eggs, and in the third, stir the Panko bread crumbs, Romano cheese, Italian seasoning, salt, garlic powder and black pepper.

– Take the Cauliflower and place it in the first container. Toss to coat, or put the lid on and shake. Working in batches, tap the excess flour off the Cauliflower and dip it in the egg. Then place in the Panko Crumbs. Toss to coat. 

-When the oil is at 350 ̊ start frying in batches. It’s easier if you divide your pieces into large, medium and small. Place a few large pieces in, then a few medium and then a few small pieces. Once the small pieces are in, cook for 60 seconds. Remove to paper towel-lined plate.

– Repeat with remaining cauliflower, serve hot.

2. Margherita pizza Quesadilla

Super easy to make in only 8 minutes!

Ingredients:

  • 1 flour tortilla
  • 1 tomato, sliced
  • 3 oz mozzarella, sliced
  • 4 large basil leaves, chopped

Instructions:

– Heat a heavy skillet over medium-high heat.

– Place the tortilla in the pan, and layer the tomato, mozzarella, and basil leaves on one half. Cook for a minute before folding the empty half of the tortilla over the other side. Cook for another two minutes, or until the cheese is beginning to melt and the underside of the tortilla is brown. Flip, and cook until this side is also brown.

– Slice and serve!

3. Skinny baked mozzarella sticks

Ingredients:

  • 12 sticks part-skim, reduced sodium mozzarella string cheese (Sargento)
  • 1 large egg, beaten
  • 2 tbsp flour
  • 5 tbsp Italian seasoned breadcrumbs
  • 5 tbsp Panko crumbs
  • 2 tsp parmesan cheese
  • 1 tbsp dried parsley
  • olive oil cooking spray 

Instructions:

– In a small bowl, whisk together egg and 1 tbsp of water

-Working one at a time, brush wonton wrapper with egg wash

-Place string cheese in the center of each wrapper

-Bring the bottom edge of the wrap tightly over the cheese, rolling from bottom to top until the top of the sheet is reached (be careful not to tear the wrappers)

-Add the olive oil to a medium-hot skillet and cook the mozzarella sticks until golden brown and crispy (about 1-2 minutes)

4. Healthy puppy chow

Extremely easy to make in dorms! 

Ingredients:

  • 2 cups whole grain cereal squares
  • 2 tbsp PB2 Prepared
  • ½ cup prepared dock chocolate pudding
  • 1 packet sugar free vanilla pudding mix (Unprepared)
  • ½ cup raw almonds
  • ½ cup dried cranberries
  • 1 packet sweetener

Instructions:

-Add pudding to cereal and stir.

-After the pudding and cereal are evenly combined, add the PB2 and stir.

-Mix in almonds and cranberries.

-Add in sweetener and pudding mix and stir lightly.

-Chill for 30 minutes.
