St. Patrick’s Day Treat: Lucky Charms Cupakes

Looking for a St. Patrick’s Day treat that won’t leave you feeling tipsy or bloated?   Lucky for you, HC TCNJ has you covered with this simple Lucky Charms cupcake recipe. Spend St. Patty’s day munching on these tasty treats, and you’ll feel like you’ve found the pot of gold at the end of the rainbow! Well, almost.

These cupcakes are almost too easy to make, but don’t be fooled – they’re still magically delicious. This St. Patrick’s Day recipe is made with a boxed cake mix and homemade marshmallow frosting that will charm your taste buds. Whether you’re Irish or not, these cupcakes will help you unleash your inner leprechaun and have you wishing on four leaf clovers that you had made more.

 

Yield: 24 cupcakes

 

For the cupcakes:

1 box white cake mix

2 cups Lucky Charms cereal

 

For the frosting:

½ cup (1 stick) butter

½ cup vegetable shortening

2 cups powdered sugar

1 ½ tsp. vanilla extract

1cup- 1½ cups Marshmallow Fluff (depending on how much frosting you like on your cupcakes!)

To Decorate:

½ cup of Lucky Charms

Green Sprinkles or Edible Glitter

 

 

Instructions:

-Preheat oven to temperature listed on cake mix box

-Prepare batter as described on box

-Fold in Lucky Charms cereal

-Place batter into cupcake liners, making the liners about 2/3 full

-Bake according to box directions

-Let cool completely before frosting the cupcakes

-Frost each cupcake then add sprinkles and additional Lucky Charms to the tops

-Enjoy!
