Avoiding the Freshman 15

Everyone talks about the “Freshman 15” like it’s inevitable. However, this

is completely not true. If you keep your fridge stocked with great stuff you can

prepare in your room, you can beat the belief that you can’t prepare healthy

food when you’re stuck in the the world of microwaves and mini fridges.

To make a delicious omelet that will kick the ones from the dining hall out
of the park as well as cut back on considerable wait time (did you really think you
had time to get there before your 9am class anyway?) all you need are a few simple
ingredients, a large coffee mug, nonstick spray, and a microwave.

Classic Eggs:

1/2 cup fat-free liquid egg substitute
cooking spray
Vegetables of your choice
Low fat cheese if you desire??

Directions: ? Spray a large microwave-safe mug lightly with nonstick spray.
Microwave vegetables for 30 seconds. Remove from microwave and add egg
substitute and cheese and stir. Microwave for about a minute. Stir gently, and
then microwave for another 30 – 45 seconds, until scramble is just set. Stir and
enjoy!?

Parfaits are a power meal/snack because they contain protein and fiber
to provide ultimate satiety. It also provides many nutrients, making it an excellent
choice. Between the calcium in the yogurt and antioxidants in the berries, it’s
definitely a smart choice.

Yogurt Parfait

1 8oz container of Greek yogurt
1/4 cup of strawberries, diced
1/4 cup of blueberries
about 2-3 tablespoons of granola

Directions: Combine diced strawberries and blueberries in a small bowl or
container. In a tall glass, bowl or Tupperware container, put about 3-4 spoonfuls of yogurt.
Top with about 1/3 of the berries and a tablespoon of granola. Repeat until
you’ve used up all your yogurt, berries, and granola.

MAKES 1 SERVING

Also, don’t forget the obvious! Go for snacks such as a ¼ cup of nuts,
fresh fruit, or cut up vegetables. Also, many people gain weight because they
snack all the time, especially at night even when they’re not hungry. Another
way to avoid those fifteen extra lbs is to walk all over campus whenever you can.
Eating healthy will help you feel physically good, and keep you in top mental shape
as well!
