Dormestic Goddess: Yam-Pear Soup

Makes 4 servings.
 

1 tbsp olive oil
½ white onion, diced
½ stalk celery, diced
2 yams, peeled and diced
3-4 pears, peeled and diced
4 cups vegetable stock
salt, pepper, cinnamon, and nutmeg to taste
 
1.       Sautee onion and celery in olive oil.
2.       As soon as onions are translucent (about 4 minutes), add yams and seasonings.
3.       Add pears.
4.       Stir in vegetable stock (one cup at a time) and simmer on low heat until yams are tender.
5.       Puree in a blender and then put back on the stove until heated through.
6.       Serve with fat free sour cream or plain yogurt.
