Cooking on Campus: Healthy Crispy Treats!

This week marks a momentous occasion for the Cooking on Campus blog! For the first time in the course of my writing for Her Campus St. Olaf, I have prepared a healthy recipe! Despite the fact that all of my previous recipes have been unhealthy desserts, I do try to eat mindfully in my everyday life. Sometimes though, all I want is a homemade treat, and most of the homemade treats I love are unhealthy cookies or other sweet snacks.  
I figured it was about time to share a healthy recipe, so I picked one that was easy to make and fits the fast-paced schedule of a busy St. Olaf student. These healthy crispy treats come from a cookbook my friends gave to me for my birthday. The cookbook, The Healthy College Cookbook, highlights easy recipes for college students.

These crispy treats stuck out to me because they were healthy, easy to make, and can last a couple of days in the refrigerator. Cooking these over the weekend provides you with a healthy snack you can put in a plastic bag and carry around for munching later on hectic week days.

All you need is:
– 1cup peanut butter (either smooth or chunky)
– 1 cup orange juice (or whatever juice you have on hand)
– 1 cup dried fruit (bananas, apricots, raisins, cranberries, etc.
– 2 cups puffed rice cereal.

1. Stir all ingredients in a bowl until combined. Form into walnut shaped balls.
2. Store in the refrigerator until ready to eat.
