Cooking on Campus: Fluffer Nutters

The combination of marshmallow fluff and peanut butter brings me back to my childhood, as memories of eating fluffer nutter sandwiches in my elementary school cafeteria come rushing back. I found the ‘grown-up’ version of this childhood favorite on the food blog Picky Palate (http://picky-palate.com/,) and instantly recognized how easy and yummy these little sandwiches would be for college students. Marshmallow fluff, peanut butter, vanilla wafers, and chocolate – it would be hard to combine these ingredients in a way that was not delicious.

I want to thank all of you for taking the time to read my blog, and for reading Her Campus St. Olaf in general! I have truly appreciated your comments and enthusiasm for my recipes. I will not be writing during the summer, but I will be back in the fall with more recipes for you all to try!  Good luck on finals, and have a fabulous summer!

If you need a quick study break, for a snack why not try these fluffer nutter wafers?

All you need is:
1 box of Nilla Wafers
1 jar of marshmallow fluff
Chocolate chips (or Nutella)
1 jar of Peanut butter

Lay out the wafers on a plate, round side facing down. Spread peanut butter on each wafer

 Next, spread marshmallow fluff on top of the peanut butter

Place a wafer on top, making a little sandwich. *For this step you can try two different things. You can either dip the top of the sandwich in melted chocolate (melt chocolate chips in a microwave safe bowl) OR spread Nutella spread on top of the wafers. Depending on your tastes, either of these combinations will work just fine.

The finished product should look like this:

Hint: Dipping a vanilla wafer in the marshmallow fluff (or Nutella, or melted chocolate, or peanut butter) creates a simple snack that is utterly delicious, and nearly impossible to stop eating.
