Fruits and Vegetables to Eat This Summer

Summer is the best time to start eating healthier.  Everyone wants to look their best during the warm summer months to rock their cutest dresses, shorts, and swimsuits.  It is easier to eat healthier too, the weather is warmer making you crave light and refreshing food, and farmers markets are overflowing with delicious fruits and vegetables.  There are a few fruits and vegetables that are especially good during the summer months of June, July, and August.

              The first fruits that everyone should enjoy this summer are berries.  Blueberries, raspberries, blackberries, and strawberries are always ripe during the summer.  They are best when they are picked and eaten on the same day.  Not only are they super sweet but also they are an excellent source of fiber, antioxidants, and Vitamin C.  Another great fruit to enjoy are peaches.  Peaches are very sweet and can be called natures candy.  They are packed with potassium, fluoride, and iron.  They are easy to eat as a dessert.  If you want a super delicious treat, try grilling fresh peaches and top them with a little bit of mint and maybe even some whip cream.    Melons are always extremely refreshing fruits to enjoy during the summer.  They are sweet, hydrating, and very low in calories.  Tomatoes are great too.  They contain lots of Vitamin C and can be eaten in a variety of ways, such as in salads, sauces, and even plain with hummus or ranch.

              Shell Peas are also very ripe in the summer; you can find these vibrant green vegetables in any supermarket.  They are packed with Vitamin K and D.  You can throw them in a stir-fry or enjoy eating them plain with a healthy dip like hummus or guacamole.   Finally, corn is a great vegetable to eat during the summer.  Corn is naturally sweet and can be thrown in to almost any dish for an extra kick.  Corn is rich in magnesium, potassium, iron, and Vitamin B-6.  The best way to eat corn in the summer is grilled.  You can throw corn in to any salad or side dish for a sweet, healthy, delicious, and flavorful meal.

              Clearly, summer is a great time to get your fruits and vegetables in, there are so many delicious summer recipes that involve these fruits and vegetables.  The options are endless.  Make this the summer you really enjoy nature’s delicious gifts!
