College classes keep us busy and sometimes can have crazy schedules. I know I have a night class this semester Monday, Tuesday and Thursday. This makes it hard to get food from the cafeteria especially when I have other classes before this one with only a 10 minute window between. I decided last semester that buying dinner on uber eats, the food court, or just for delivery got expensive so I invested in a small crockpot so I could make dinner for 1-2 people in it. It has really been a good thing cause I am just able to set it up and let it cook then my roommate or I turn it on when we go to our night class since we have it together and when we come back around 8:30ish dinner is ready. I am going to share with you some of my favorite recipes that we tried along with some information on it. 

 

  • Buffalo Chicken Sliders: Chicken mixture will last for 3 days in the fridge for leftovers. Prep time is 15minutes and cooking time is 4 hours on high.

  • 3 Ingredient Chicken Tacos: Cooking time on low for 6-8hrs.

  • Cajun Pork & Beans:  Cooking time 4-8 hours on low. 

  • Triple Cheesy Mac & Cheese: This is Vegetarian. Lots and lots of cheese/dairy. Cooking time is about 3 hours. 

  • Bacon Mac & Cheese: Cooking time is about 2 hours on low. Prep time is 15 minutes.

  • Alfredo Tortellini: This is Vegetarian: It is just 4 ingredients: tortellini, alfredo sauce, shredded mozzarella, and garlic powder. Prep time is 5 minutes. Cooking time is 1 hour and 30 minutes. 

 

I had to cut the recipes in half or more in order to be able to fit it in my baby crockpot and I would have done that anyways if it was bigger because it is just my roommate and I eating it so we don’t need to cook for a recipe that feeds 8-10 people. The only time we tended not to cut it in half if it fed 4 people typically and we had another night class that week so we have left over to eat another day.

Veronica A(V) is the Campus Correspondent at HC @ SAU. She oversees the entire chapter including editorial, events, social media, etc. Beyond HC, V is involved on campus. She is the President of DAPi. She is the Social Media Director for SAAT, and a Sexual Assault Advocate. Veronica is majoring in Early Childhood Education with an endorsement in Special Education and a minor in Music. She is currently student teaching!!! In her freetime, V plays the flute and other instruments and can sing. She used to play and coach softball. Veronica was born in Florida but now lives in Illinois. She also has 2 cats at home. She was the D.E.I. Ambassador for 2 years.
