Easy Stir Fry Recipe for College Students

If you are living with food allergies as a college student it can be difficult to find things that you can eat without the fear of having an allergic reaction or worse. Here is a recipe that is not only college friendly but also allergy friendly.

The first ingredients needed in this recipe come from the downstairs salad place which offers fresh ingredients and options for those with allergies. Before ordering any of the salad toppings just make sure to ask your server about whether or not there are preservatives and or gluten in the food before deciding on your toppings.

The following recipe is nut free, dairy free, casein free, preservative free as well as nitrate free.  If you have a soy allergy, substitute the tofu in this recipe with grilled chicken which is preservative free and available at the salad bar.

Ingredients from Salad Bar:

·         Chic peas

·         Olives

·         Crasins

·         Seasoned Tofu

·         Carrots

·         Spring Mix

Ingredients from home:

·         Extra virgin olive oil

·         Mushrooms ( optional)

·         1 ripe mango cut into chunks ( optional)

·         Dry basil

·         Pepper

·         Salt free seasoning ( any)

·         Honey ( optional)

 

1.      Lite stove and put a skillet on high and put in bout ¼ cup oil

2.      Pour in ingredients from salad bar minus the spring mix into skillet.

3.      Simmer on low making sure to turn the Tofu so that it doesn’t burn

4.       On a medium plate put the mushrooms and mango chunks.

5.      Drizzle honey over top of the mango piees and add dry basil and pepper

6.      After simmering the stir fry for about 5 minutes add the mango and mushroom mixture and turn heat back onto medium.

7.      Continue stirring the stir fry until the mango begins to get liquidy like a sauce.

8.      Once this happens put the stir fry on low and keep it there for about 2 minutes

9.      Take the spring mix and put it on the medium plate that you used for the mango nd arrange it in a pile.

10.  Once the stir fry is done and the tofu is toasted to your liking, pour over the spring mix.

11.  Add a little bit of the salt free seasoning at the end and start eating.

If you like the way this recipe tastes, feel free to substitute the salad bar ingredients for different ones and your stir fry will never get boring. Make sure you talk to the server before adding any new ingredients so that you know that they meet your restrictions.
