Once you get an Instant Pot, your life will never be the same. I never thought I could love a kitchen appliance so much until I bought my Instant Pot on Black Friday last year. So, in honor of the love of my life coming into my existence almost a year ago, here are some my favorite, quick, and easy meals that have become staple recipes for me as a college student: 

1. pork chops (Don’t immediately roast me)

Now, if you are like my friends, you immediately made the nastiest face when you read pork chops. I vividly remember the dreadful dinners when my mom would make pork chops drier than the Sahara Desert. However, if you ditch making pork chops in the oven for the Instant Pot, I promise you that you’ll never switch back to your old ways again. The Instant Pot perfectly cooks meat every time. Your pork chops will be so tender that they fall off the bone and it will be hard to pick them up without them falling apart! 2. lemon chicken orzo soup

This soup is light with a lemon twist! If you love a hint of citrus, you’ll love lemon chicken orzo soup. If you can, make it with fresh lemon, thyme, rosemary, and garlic! The flavors meld so well together it will blow your mind. I always had a little spice, whether it is red pepper flakes or a dash of hot sauce in my bowl. 3. lasagna soup

First, who doesn’t love lasagna? This meal can be a bit heavier, but it will soothe your soul. My favorite part is the dollop of ricotta cheese that you put into your individual bowl. It makes the soup that much creamier and more delicious. You can also make this meal spicy by buying hot Italian sausage and adding red pepper flakes. 4. pork adobo

Once again, the Instant Pot makes THE most tender meat, so this is another great dish to try. This is a new recipe that I recently tried and enjoyed. It is a great dish to serve over rice and is quick to make. I would suggest doubling the liquid and marinade to give the meat some extra sauce to cook in and to pour over your rice. 5. chicken carnitas

Chicken carnitas can be used for tacos, burritos, quesadillas, burrito bowls, salads, and more! I love this recipe because it lasts for days and can be used for many different dishes! An Instant Pot is a great appliance to have as a college student because it makes cooking fun and allows you to make delicious meals without much preparation. If you own an Instant Pot, check out these meals so you can enjoy all the tasty flavors. If you do not have an Instant Pot, then this is your sign to get one. I ordered mine off Amazon during Black Friday for $50! It is a great investment, and you won’t regret it.
