5 Recipes For First Years in Rez

Dorm kitchens are usually pretty pitiful; they lack space, appliances, and cooking ware. At the same time, dining hall food can get old real fast, and it becomes necessary to start using your rez kitchen for more than just making popcorn or cookies. Luckily at McGill, it’s only the first years that have to deal with boring rez food and terribly cramped kitchens. After first year, cooking will be a lot easier! Until then, here are five recipes that can be made in any kitchen. 

1. Chicken and Cheese Quesadilla

Lauren Conrad has some great ideas for quick and easy dorm food, and her take on the quesadilla is seriously tempting. Just take a tortilla, whole-wheat if you want to be healthy, and add grilled chicken, cheese, peppers, tomatoes and avocado. Pop it in the microwave and you have a warm and cheesy snack or meal that’s healthy and delicious. 

Ingredients:

– Tortillas

– Assorted Veggies (peppers, onions, tomatoes, etc.)

– Slices of Avocado

– Cheese

 

 

2. Loaded Baked Potato

While not the healthiest meal in the world, a potato loaded with cheese, bacon, chives and sour cream is one of the best things to eat when it’s negative degrees outside (even though it’s supposed to be spring now…). Simply prick a potato with a fork a couple of times before cooking in the microwave for five minutes on each side at full power. Then cut open the potato and add your choice of toppings!

Ingredients:

– Potato

– Cheese

– Sour Cream

– Bacon

– Chives 

 

3. Microwave Frittata

You can make scrambled eggs, quiche, and even frittata just using a microwave!. For the frittata, melt some butter in a mug before adding chopped veggies of your choice. Then add two eggs and stir everything together before cooking for one to two minutes. This meal is great for breakfast, but is also a healthy snack to have anytime; since it’s packed with protein and veggies. Find the  original recipe here.

Ingredients:

– 2 eggs

– 2 tablespoons butter

– Assorted veggies (onions, tomatoes, peppers, etc) 

 

 

4. No-Bake Granola Bars

These bars are healthy and great on-the-go snacks. This blog has a great tutorial on how to make them, but essentially this could all be made on the stove and then pressed into a pan before being cut up. 

To make them, melt the butter and then add the honey, salt, and brown sugar. Let this mixture come to a boil and in a separate bowl mix the oats, cereal and coconut together. Once the boil begins, keep it boiling for 2 minutes and 15 seconds. Add the vanilla and pour the mixture over the oat mixture. Mix the ingredients together and then add any extra add-ins before pushing everything into a slightly greased pan. Then, refrigerate the mixture and cut to your liking. 

Ingredients:

– 2 cups quick cooking oats

– 1 cup rice crispy cereal

– 1/4 cup shredded coconut

– 1/4 cup butter

– 1/4 cup honey

– 1/2 cup brown sugar

– 1/2 teaspoon salt

– 1/2 teaspoon vanilla

Mix – In Variations 

– Chocolate chips

– M&Ms

– Peanut butter (add into hot mixture before pouring over oats)

 

 

 

5. Microwave Pizza Bagels

For this recipe, you’ll only need a bagel, pasta or pizza sauce, and cheese. You could also add toppings such as vegetables, pepperoni, etc. Just toast the bagel before covering it with sauce, cheese, and any other toppings, and then pop it in the microwave until the cheese has completely melted. It’s a smaller portion than a regular small pizza, and it’s definitely a good late night snack or even a meal. 

Ingredients:

– Bagel

– Pizza/Pasta Sauce

– Cheese

– Assorted Toppings
