4 Healthy Dorm Room Recipes To Get You Through the Fall Season

Fall is the season of cozy sweaters, colorful leaves, and of course delicious treats. These easy recipes are perfect for college students who need to take a break from the stresses of school and relax with a yummy treat. You only need a microwave for these recipes, so they’re super simple and perfect for an on-the-go college student. Enjoy!

Pumpkin Mug Muffin

 

Ingredients:

  • 4 tbsp flour

  • ½ tsp pumpkin pie spice

  • ⅛ tsp baking powder

  • 2 tbsp maple syrup

  • 2 tbsp milk (or dairy-free milk)

  • 1 ½ tbsp canned pumpkin puree

  • 1 tbsp oil (canola, sunflower, coconut, etc.)

  • Pinch of salt

 

Directions:

  1. In a microwavable mug, add in the flour, pumpkin pie spice, baking powder, and salt and mix together.

  2. Add maple syrup, milk, pumpkin puree, and oil. Stir just until mixed.

  3. Microwave for roughly 60 seconds or until firm to the touch on top.

 

Maple, Brown Sugar and Cinnamon Overnight Oats

Ingredients:

  • 1 cup rolled oats

  • 1 cup almond milk

  • 1 ½ tbsp brown sugar

  • 1 ½ tbsp maple syrup

  • 1 tsp cinnamon

  • 2 tbsp chopped and toasted pecans (optional)

 

Directions:

  1. Combine all ingredients in a large bowl.

  2. Divide equally into two cups or bowls.

  3. Store in fridge for at least 2 hours or overnight.

  4. Enjoy the next day cold or heat up for 30 seconds in a microwavable cup.

 

Caramel Apples

Ingredients:

  • 1 sliced apple

  • 10 caramel candies (i.e. Kraft Caramels)

  • 1 tbsp milk or heavy cream

 

Directions:

  1. Melt caramel candies in a microwave-safe bowl for 30 seconds or until mostly melted (the caramel will continue to melt even when removed from the heat, and be careful not to overcook the caramel because it can easily burn).

  2. Pour milk into melted caramels and stir until fully combined.

  3. Dip apple slices in caramel and enjoy!

 

Cranberry Energy Bites

Ingredients:

  • 2 cups old-fashioned oats

  • ¼ cup ground flaxseed

  • ¾ tsp cinnamon

  • ½ cup almond butter

  • ¼ cup honey

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 cup dried cranberries

 

Directions:

  1. In a large bowl, stir together the oats, flaxseed, and cinnamon.

  2. In another bowl, stir together the almond butter, honey, vanilla, and salt. **Hint** if you’re having trouble mixing the almond butter you can melt it in the microwave for 15 seconds to soften it up!

  3. Add the wet mixture into the large bowl of dry ingredients and combine with a spoon or wet hands (to reduce sticking!). Add in the dried cranberries.

  4. Scoop the mixture into little ball shapes.

  5. Enjoy right away or store in the fridge for up to 5 days.
