China

Because of its history, there are many types of tea in China, which is said to be the origin of tea. They are classified into green tea, white tea, yellow tea, blue tea, and black tea, starting with the least fermented. The early fermented teas are close to the color of the original leaves, and as fermentation progresses, the color changes to red and the bitterness increases. There are more than 1,000 varieties of tea, including teas infused with the fragrance of jasmine or roses, and teas made from dried flowers instead of tea leaves.

Japan

Most of the tea produced in Japan is green tea. There are many different types of tea depending on how the tea leaves are grown and produced. Sencha is the most famous of the green teas. It has a bright green color with moderate astringency and a refreshing flavor. Hojicha is made by roasting tea leaves at high temperatures. This gives it a fragrant brown color. There are many other types, such as “genmaicha,” which is mixed with roasted rice. In addition, “matcha,” which is made by grinding tea leaves into a fine powder, is not only drunk by mixing it with a tea-spinning device but has recently become a standard ingredient in sweets and confectionery.
