Pancakes are the perfect way to start off a morning. They do require a little bit of time, so it is a perfect way to start or end the weekend. These pumpkin pancakes are perfect for the fall season and are an awesome thing to serve for brunch. Before I start cooking I always brew myself a cup of coffee. Maple or cinnamon flavored coffee will also compliment this recipe perfectly. These would also go perfect with pumpkin coffee, or my favorite a pumpkin cream cold brew from Starbucks.

Food processor

Griddle or frying pan

Needed ingredients:

1 cup Old fashion oats
-
½ cup Pumpkin puree
-
1.5 teaspoons Pumpkin pie spice

1/4 c Milk of your choice
-
½ teaspoon baking soda
-
Splash of vanilla extract
-
Maple syrup to go on top
-
Butter if you like

Chocolate chips
Instructions:

In a food processor, place oats, and pulse until a flour-like consistency is made

In a medium-size bowl add pumpkin puree, and milk, vanilla extract, and pumpkin pie spice

Whisk together

Add in oat flour and baking soda

Mix until well combined

Preheat your grill or frying pan. It will be ready when you splash water on it and it sizzles

Pour about ¼ cup batter per pancake

Wait until the pancake bubbles

Add chocolate chips and flip
-
Wait about two more minutes or until golden

Put pancakes onto a plate

Drizzle maple syrup and add butter until the desired flavor
