How To: Ham and Cheese Dream Parcels

I have been experimenting with puff pastry recently, and in doing so I have discovered how to create the most adorable little snacks you have ever seen. Apparently these are called Empanadas and someone in Peru invented them first, but my version is better because Dream Parcel is way more fun to say. 

You Will Need:

Ready rolled puff pastry (about 400g)

Some ham (about 60g)

Some cheese (about 70g)

1 egg

Optional extras: fried onions, sweet corn, tomatoes

1.       Preheat your oven to 200°C and put some baking paper on a tin.

2.       Cut some circles in your pastry. If you don’t have a cutter, use a mug or a bowl – good luck if you choose to do it freehand.          (The measurements should make around 8 circles, 10cm in diameter, but of course you can make them any size you fancy.)

3.       Put your circles in/on your tin and place some chopped ham and grated cheese into the centre of each one. Then brush the edges of the circle with a beaten egg.

4.       Fold the pastry over to create a half-moon shape and press down the edges with a fork so nothing leaks out. Also make a couple of slits in the top of the pastry so the steam has                 somewhere to go.

5.       Brush the rest of your egg over the top of the parcels and cook for 15 minutes.
