With fall officially starting a few weeks ago and the semester quickly approaching the height of midterm season, what better way to release stress than by trying out some tasty recipes? Food is essential fuel for studying and while ramen may be enticing, here are some healthy (yet easy) alternatives you could opt for instead.

This first recipe is such a quick and easy meal that makes plenty of servings and can be saved in your fridge for several days. These black bean and sweet potato quesadillas are so simple to make and contain no meat but are still so satisfying. With only a few ingredients you can impress your friends with these fall-inspired quesadillas. The recipe calls for grilling the sweet potatoes but simply sautéing them does the trick. Adding a can of corn can also turn these into a heartier meal. Using one sweet potato makes enough stuffing to fill plenty of quesadillas and you can store the mixture in the fridge for a few days in order to make fresh quesadillas every time.
