In my mind, there is no better way to warm up on a cozy, autumn night than with homemade soup! Everyone makes the classic chicken noodle, but I bet no one told you it is just as easy to make a slightly more ~flavorful~ soup. Here is the recipe I use to make tomato bisque at home:
Ingredients:
- 6 large tomatoes
- Half of an onion
- 3 tbsp Minced garlic
- 2 tbsp basil
- Avocado oil
- Salt and pepper
- 2 cups chicken broth
- 1 can tomato paste
- 1 tbsp white sugar
- 2 tbsp oregano
- 1 cup heavy whipping cream
- Shredded cheese of choice (to top)
- Preheat the oven to 400 degrees.
- Chop up the tomatoes and onion, and place in a large oven-safe dish.
- Coat the chopped up veggies with a little avocado oil, basil, salt, and pepper.
- Let the vegetables bake at 400 degrees for 20 minutes.
- Move the vegetables into a blender or food processor, and completely blend into a liquid.
- Pour this blended liquid into a stock soup pot.
- In the soup pot, add in the chicken broth, tomato paste, sugar, oregano, basil, and minced garlic onto the stovetop.
- Stir until boiling.
- Once boiling, reduce heat to a simmer and put the top on the pot for 10 minutes.
- After 10 minutes, remove the pot lid and remove the pot from heat.
- Pour in your heavy whipping cream and mix.
- Top with your choice of shredded cheese, salt, and pepper. You could also pair it with grilled cheese!
