The weather is getting warmer and everything around us is growing into all shades of green. With this, comes amazing fresh produce, and it’s my favorite springtime activity to come up with fun, nutritious, and easy recipes. Here is a brunch and dinner combo of my favorite spring inspired meals to try this spring season!

Cinnamon Green Smoothie:

1 frozen banana

1 peeled avocado

1 scoop of your favorite vanilla protein powder (optional)

1 cup of any milk 

2 tablespoons flaxseed

1 handful baby spinach 

½ tsp cinnamon 

  1. Add all ingredients to blender and blend until smooth. 
  2. Enjoy!

Garlic and Greens Pasta:

5 tbsp salted butter

4 garlic cloves

2 tbsp flour

1 cup chicken broth 

1 cup whole milk/half and half

½ cup parmesan cheese

Multiple generous handfuls spinach- to liking

½ cup-1 cup frozen or fresh peas

½ tsp italian seasoning

1 tsp parsley

½ tsp onion powder

½ tsp garlic powder

¼ tsp red pepper flakes 

1 tsp salt 

½ tsp pepper

  1. Melt butter, add garlic, cook until butter is slightly browned. 
  2. Increase heat and add flour, whisk until smooth and slightly browned.
  3. Add chicken broth, cook until slightly thickened, then do the same with the milk/half and half until desired thickness
  4. Add seasonings, stir, and taste. Season more as needed, then add parmesan cheese, peas, and spinach and cook for several minutes until cooked all the way through.
  5. Add pasta and enjoy!
