Avocado: The New Trend

Avocados have become as stylish as a little black dress. This simple fruit has become a staple for my family as well as America. In every cooking show and health magazine there is a recipe using avocado. Why the trend? Not only are they delicious, they are full of nutrients! Avocados can provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B, and folic acid. They also act as a nutrient booster by enabling the body to absorb more fat-soluble nutrients. They are also a great summertime snack! Avocados can be used in recipes using, chicken, eggs, salad, burgers and more. Here are three simple and tasty recipes.

Avocado and Egg Breakfast Pizza

1 large avocado

1 tablespoon chopped cilantro

1 1/2 teaspoons lime juice

1/8 teaspoon salt

1/2 english muffin

2 large eggs

1 tablespoon vegetable oil

Slice the avocado in half, remove pit, and scoop into a bowl. Add the cilantro, lime juice and salt. Mash with a fork until smooth with a few chunks of avocado.  Spread the avocado mixture onto the english muffin (toasted is tastier).

Heat oil in a skillet over medium heat. Fry eggs whichever way you like and place on top of the english muffin.

Tomato Avocado Salad

1 large avocado

1 tomato

2 handfuls of spinach leaves

pinch of salt

pinch of pepper

1/2 lemon

Dice the avocado and tomato into small pieces and toss onto the spinach leaves. Sprinkle the salt and pepper onto the salad. Lastly, squeeze the lemon on top. This meal is cost efficient, simple to make, and tasty!

Avocado BLT

3 slices bacon

1/2 small avocado

1/2 teaspoon lemon juice

pinch salt

2 slices sourdough bread

2 slices tomato

1 handful lettuce leaves

In a large skillet over medium heat, cook bacon for 3-4 minutes or until browned. Set aside. In a bowl, combine avocado, lemon juice, and salt, and mash until creamy. In a toaster, lightly toast the sourdough slices. Finally, create the sandwich by smearing the avocado mixture on one slice. Next add the bacon, tomato and lettuce and top with the remaining piece of bread. This is a great spin on a classic sandwich!
