For those of you who celebrate Passover, you know how difficult it can be to make matzo exciting after a few days. Matzo, the unleavened bread the Jewish people took with them on their escape from Egypt, is eaten for the seven days of the holiday to imitate the hardships of the Jews during their journey in the desert. All leavened products, like bread and pasta, are avoided, which means matzo, matzo, and more matzo. And while the stuff is pretty great with some peanut butter slathered on top, there’s only so much a girl can take! So here are ten fun, simple, and healthy recipes, from the classics to some unusual creations, to help make the holiday tradition a little easier to stick with.
