Valentine’s Day Treats That Will Melt Your Heart (and Your Valentine’s Too!)

Everyone wants something sweet and mouthwatering on Valentine’s Day.  Whether you have a valentine or not, you’ll fall in love with these amazing recipes and they’ll have you asking “be mine” with every delectably sweet bite.   Make them for your valentine, your friends, or yourself and you will be sure to have a great Valentine’s day!

Red Velvet Love Cakes with Cream Cheese Frosting
What you need:
For the love cakes:  Duncan Hines red velvet cake mix, 1 ¼ cup water, 1/3 cup vegetable oil, 3 large eggs, cupcake pans, and paper cupcake liners (try red ones or valentine’s day themed ones)
For the frosting:  4 oz. unsalted softened butter, 4 oz. softened cream cheese, 2 cups powdered sugar, and 1 teaspoon vanilla extract
What to do (for the love cakes):
·         Preheat oven to 350 degrees and line 2 sixteen-cup cupcake pans with the paper liners.
·         Blend the red velvet cake mix, water, vegetable oil, and eggs in a large bowl.  Beat until smooth.

  Make sure to scrape the sides of the bowl every once in a while to make sure no mix is left on the sides.
·         Pour the batter into the cupcake pans about halfway.
·         Bake for 35 to 38 minutes.  Insert toothpick in center to make sure the cupcakes are done.  If it     
comes out clean, they’re ready.
·         Cool for 15 minutes and top with the cream cheese frosting.  You can also buy cream cheese frosting if you don’t feel like making it yourself.

What to do (for the frosting):
·         Blend ingredients in a bowl with an electric beater until smooth and creamy.
·         Top the love cakes with the frosting and enjoy!
 
Chocolate Covered Fruit That Will Melt Your Heart
 
What you need:  Fresh strawberries, Green apples (cut), 1 banana, one 12 oz. package of semisweet chocolate chips, 1-2 tablespoons of vegetable or olive oil, wax paper, and a cookie sheet
 
What to do:
·         Line the cookie sheet with the wax paper.
·         Wash the strawberries and dry with a paper towel.
·         Unpeel the banana and cut in half.
·         Place the chocolate chips in a medium saucepan.  Add about 1 teaspoon of oil and turn the stove on low heat.  Stir the oil and chocolate chips together until the chocolate is melted and the combination is smooth.
·         Dip the fruit into the chocolate and place on the cookie sheet.
·         Refrigerate for 1-2 hours and enjoy!
 
“I Heart You” Chocolate Chip Cookie Cake
What you need:  2 1/4 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 cup softened butter, 3/4 cup granulated sugar, 3/4 cup packed brown sugar, 1 teaspoon vanilla extract, 2 large eggs, one 12 oz. package of semisweet chocolate chips, Vanilla icing, red decorating icing, and a cookie sheet
What to do:
·         Preheat the oven to 375 degrees.
·         Grease the cookie sheet.
·         Mix the flour, baking soda, salt, and sugar in a large bowl.
·         Add the butter, vanilla extract, and eggs to the mix and beat with an electric mixer.
·         Mix in the chocolate chips.
·         Place the cookie dough on the cookie sheet in an exaggerated heart shape (the tops of the heart far apart)
·         Cook for 20 to 25 minutes and let cool for 15 minutes.
·         Spread the vanilla frosting on the cookie and decorate with the red decorating icing.
·         Enjoy!
