Recipe of the Week: Protein Packed Pancakes

Simple and healthy, this recipe is for all of those sweet tooth victims out there, craving sugar from morning to night. It’s no good starting your day with a chocolate bar or a bowl of cereal. It’ll leave you with an energy slump throughout the day, and will certainly not put you on the right step to your fitness goals. Those things might seem like a quick, cheap and easy option, but I’ve got an even better one for you! These delicious pancakes take no longer than 10 minutes, and require just THREE main ingredients – there really are no excuses for avoiding them!

 

You will need:

 

  • 2 eggs
  • 2 scoops of any flavoured protein powder (I use My Protein soy whey in vanilla).
  • Almond milk

 

Optional toppings:

 

  • Banana
  • Berries
  • Yoghurt
  • Cinnamon
  • Peanut butter

 

Method:

  1. Crack the two eggs into a blender, followed by two scoops of your chosen protein and around 30 ml of almond milk. Blend away….
  2. Now heat some oil in a pan. I use coconut oil, the best thing to cook with, or Fry Light cooking spray. Pour the mixture into the pan, forming small American style pancakes.
  3. Cook for 1 minute on each side and serve. Top with anything you like! I always use berries and chopped banana, sprinkled with cinnamon.

 

This really is such an easy recipe, requiring no excellent cooking skills at all. These little pancakes are so filling and taste just as good as the real thing. Rich in protein and low in fat, you can’t complain!
