As a college student that recently moved into an apartment with a kitchen, I really don’t have a good grasp on cooking for myself. It can be expensive, time consuming, and difficult. At the same time, it’s so important to nourish yourself, and that is how you’ll get the best results in classes. So here are my favorite meals that check all the boxes: healthy, easy, and delicious!

Pasta & Chicken Sausage

This is my go-to. All you have to do is boil up your favorite pasta, cook a good amount of chicken sausage, and combine any vegetable you have with a sauce. My favorite thing about chicken sausage is that is typically comes pre-cooked, so you don’t have to worry about undercooking it and getting sick.

Tofu Stir fry

Stir fry is an amazing way to get a bunch of veggies in. Noodles are relatively inexpensive and quick to cook. I like to make a simple peanut sauce by mixing peanut butter and soy sauce, and I use this sauce to marinate the tofu. Then you can sauté your veggies, I like to use broccoli and carrots in this dish. It is super delicious and you can switch up these ingredients to your preferences!

Burrito bowl

I love burrito bowls because just like the stir fry, you really can add whatever you have. I like to make some white rice and throw it in a bowl with black beans, salsa, and avocado. For protein you can add plain greek yogurt and/or any meat!
