‘Hot Girl Summer’ Mocktails

Who said you need alcohol to have an enjoyable summer? Absolutely not us! All you need is a fruity drink accompanied by some friends or family under the Irish sun (when we get lucky enough to have some). These alcohol-free mocktails are the perfect way to ring in the summer without the dreaded hangover.

 

Mint ‘No’jito

This refreshing recipe for 2 just requires 1 tbsp of caster sugar, soda water, mint and 3 juiced limes, and it only takes 5 minutes to make!

Simply mix and squish the mint leaves up with sugar using the back of a spoon or the end of a rolling pin to make a minty mush. Split the lime juice between the two glasses with the sugar mint mix and pour the soda water on top.

This is great with a sugar-rimmed glass of crushed ice with a lime slice on the rim.

 

Virgin Piña Colada 

This recipe is absolutely perfect for a warm’s day to make you feel like you’re on a Caribbean holiday. For 2 servings, all you need is 1 1/2 cups of frozen pineapple chunks, 3/4 cups pineapple juice, 3/4 cup coconut milk (from a can found in the cooking isles Indian cuisine ingredients) and 2 tbsp of caster sugar.

Add all the ingredients into a blender with the frozen pineapple chunks at the bottom and blend until the puree is smooth. For a more slushie-esque type of cocktail, add some ice into the blender too.

This is great served in a chilled glass with a wedge of pineapple on the rim with a cherry and umbrella on top.

 

Margarita Sin Alcohol

This classic is one that everyone will enjoy. To make 2 gorgeous Margaritas, you’ll need 50ml of lime juice, 2 tbsp of caster sugar, soda water, orange flavouring (we recommend the Orange My Protein Flavour Drops) and lots and lots of ice.

Combine all the ingredients into a glass and either shake until the shaker feels cold, or stir vigorously if you don’t have a cocktail shaker. Strain the mocktail out over a glass of fresh, crushed ice.

We recommend rimming the glass with salt and adding a lime slice to the rim.
