This article is written by a student writer from the Her Campus at Dartmouth chapter.

I have been vegetarian for half a year and this year I want to eat vegan. There are many reasons why I want to be vegan. The biggest reason is for environmental reasons. If you want to partake in veganuary or just want to try to eat more vegan food in general, here are some easy recipes:

1. Overnight Oats

Mix the following ingredients and leave it in the fridge for at least two hours or overnight. It keeps in the fridge up to three days.

  • 2/3 cups of oats
  • 2 teaspoons chia seeds
  • 2 teaspoons maple syrup
  • 1 cup milk (almond, soy, rice etc.)

You can add fruits or nut butters to it to spice it up.

2. Loaded Fries

3. Butternut squash soup

4.  Fried Rice

5. Zucchini “Meatballs”

6. Buddha Bowl

7. Smoothie Bowl
