Sometimes all you want to eat is a meal you made yourself – but you live in the dorms. I get it. I often felt the same way when I had to live in the dorms, but don’t worry, you don’t need a kitchen (or even a kitchenette) to make some pretty tasty meals. Here are nine recipes you can make with just a microwave (and ingredients you can often find at the salad bar in the dining hall).

Breakfast Cookie in a Mug from Gemma’s Bigger Bolder Baking

Start your day off right with a protein-packed breakfast cookie in a mug you can make in less than 10 minutes.

Ingredients

  • ½ medium banana
  • 1 ½ tablespoons peanut butter
  • ½ tablespoon honey (or agave)
  • 1 tablespoon milk
  • 4 tablespoons oats (rolled or quick oats)
  • 1 tablespoon raisins (seeds or nuts)

Instructions

  • In a large microwavable mug, mash the banana well with a fork.
  • Stir in the peanut butter, milk and honey and mix well together.
  • Add in the oats and raisins and stir until combined.
  • Microwave for 45 seconds – 1 minute or until firm to the touch on top.

Blueberry Banana Baked Oats from Kim’s Cravings

For those of you wanting to try out TikTok’s baked oats trend, have no fear! This recipe you can make in your dorm.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1 tablespoon ground flax seed
  • 1 egg
  • 1/2 cup unsweetened vanilla almond milk
  • 1/3 banana, mashed
  • 1/4 teaspoon cinnamon
  • 2 teaspoons maple syrup
  • 1/3 cup fresh blueberries

Instructions

  • Spray a medium to large microwave-safe mug or small bowl with cooking spray and inside combine all ingredients except blueberries. Then, stir in blueberries.
  • Microwave on high for 2-3 minutes.

Egg And Cheese Tortillas from Mr.Breakfast.com

This recipe is for all of us who prefer a more savory option for breakfast and maybe can’t hit the dining hall before class. 

Ingredients

  • 2 large eggs
  • 2 flour tortillas
  • 2 slices Cheddar or American cheese

Instructions

  • Spray a microwave-safe bowl with cooking spray.
  • Beat the eggs in the bowl, pop into the microwave and cook for about 90, until the eggs are done. (For best results, stir the eggs after every 30 seconds).
  • Cut the cooked egg patty in half. Place a piece of egg and a a slice of cheese on each tortilla. Fold or roll up the tortillas to make burritos. Put it into the microwave for 20 seconds to melt the cheese.

Gluten Free Enchiladas from Flippin’ Delicious

A super quick meal that’ll easily become one of your favorite dorm room recipes, these gluten free enchiladas.

Ingredients

  • 1 (15 ounce) can gluten free enchilada sauce
  • 12 gluten free corn tortillas
  • 2 cups cooked chicken, shredded or diced
  • 1 cup cheese, shredded ( cheddar, Monterey jack, Colby, etc.)

Instructions

  • Wrap your gluten free corn tortillas in a paper towel and microwave for 30 seconds to heat them up so they are flexible.
  • Spread about ½ cup of enchilada sauce over the bottom of a microwave safe rectangle casserole dish.
  • Mix the chicken with any desired filling ingredients and about 1 cup of enchilada sauce.
  • Dip each tortilla in the remaining enchilada sauce. Fill each tortilla with 2 ½-3 Tablespoons of filling, and roll. Place in the pan, seam side down, and repeat with the remaining tortillas and filling.
  • Spread any remaining enchilada sauce over the top of the enchiladas. Sprinkle them with the shredded cheese.
  • Microwave for 5-7 minutes, or until the cheese is melted, the sauce is bubbly, and the enchiladas are heated through.

Ingredients

  • 4 tablespoons all purpose flour
  • 1/8 teaspoon baking powder
  • 1/16 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 tablespoons milk
  • 1 tablespoon olive oil
  • 1 tablespoon marinara sauce
  • 1 tablespoon shredded mozzarella cheese
  • 5 mini pepperoni
  • 1/2 teaspoon dried Italian herbs (basil or oregano will work)

Instructions

  • Mix the flour, baking powder, baking soda and salt together in a microwavable mug.
  • Add in the milk and oil then mix together. There might be some lumps but that is ok.
  • Spoon on the marinara sauce and spread it around the surface of the batter.
  • Sprinkle on the cheese, pepperoni, and dried herbs
  • Microwave for 1 minute 10 – 1 minute 20 seconds, or until it rises up and the toppings are bubbling

Macaroni and Cheese in a Mug from Tasty

Ingredients

  • ½ cup elbow macaroni
  • ½ cup water
  • 3 tablespoons milk
  • salt, to taste
  • pepper, to taste
  • ¼ cup shredded cheddar cheese
  • fresh chive, to garnish, optional

Instructions

  • Mix the macaroni, water, and salt in a microwaveable mug.
  • Microwave for 2-3 minutes, then stir.
  • Add the milk, cheese, salt, and pepper, then stir.
  • Microwave for another 30 seconds, stir, and garnish with a sprinkle of chives.

Vegan Ramen from The Edgy Veg

Looking for something vegan? This ramen recipe is easy to make and better than your run-of-the-mill cup of noodles.

Ingredients

  • Sauce
  • 3-4 tablespoons almond butter
  • 2-4 tablespoons sriracha sauce, to taste
  • 3 tablespoon fresh lime juice
  • 1 garlic clove, or 1 tsp garlic powder
  • 1 tablespoon tamari, or soy sauce, optional
  • 2-4 tablespoons water, as needed
  • salt to taste
  • 1 package instant ramen noodles
  • Handful shredded cabbage
  • 1 large carrot, peeled and cut into matchsticks
  • Sesame seeds- for topping

Instructions

  • Combine the almond butter, sriracha, lime juice, garlic, tamari, and water 2 tbsp at a time, in a blender and mix until well combined.
  • Add more water and blend until your desired consistency is reached.
  • Add salt if you omit tamari.
  • Prepare ramen noodles with hot water as directed on the package. I place the noodles in a large mixing bowl, and pour boiling water over them and allow to soak for roughly 5 minutes, until tender.
  • Drain noodles and toss with sauce.

Blueberry Muffin with Streusel Topping Mug Cake from Kirbie’s Cravings

Ingredients

Muffin

  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon baking powder
  • 1/16 teaspoon baking soda
  • 3 tablespoons fat free milk
  • 1 tablespoon vegetable oil
  • 7 fresh blueberries

Streusel

  • 1 tablespoon cold unsalted butter, chopped into tiny pieces
  • 1 1/2 tablespoon all-purpose flour
  • 2 1/2 tablespoons brown sugar
  • 1/8 teaspoon cinnamon

Instructions

  • Mix everything listed in muffin ingredients except blueberries into a microwave safe mug with a small whisk. Drop blueberries in, spreading them out. In a small bowl, mix streusel ingredients, until butter pieces are completely coated in the flour, sugar, and cinnamon. Sprinkle small crumbles of streusel on top of muffin batter, spreading out evenly across the surface.
  • Cook in the microwave for about 1 minute. Let cool for a few minutes before eating.

Peanut Butter & Banana Mug Cake from Gemma’s Bigger Bolder Baking

Ingredients

  • 1/2 medium banana , mashed
  • 1 tablespoon peanut butter (or any other nut butter)
  • 1 egg white
  • 1/4 teaspoon vanilla extract
  • 4 ½ tablespoons (30g/1oz) oat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • pinch of salt

Instructions

  • In a large microwavable mug mash the banana with a fork
  • Mix in the peanut butter, egg whites and vanilla
  • Add in the flour, cinnamon, baking powder and salt and gently stir in until combined
  • Microwave for 45 second- 1 minute or until it is firm in the middle
