Leslie Knope’s Tips for the Perfect Galentine’s Day

What’s Galentine’s Day, you ask?

If you’re Leslie Knope-obsessed or an avid “Parks and Recreation” fan like myself, you know exactly what I’m talking about. For those of you out of the loop, Galentine’s Day happens once a year on February 13th, the day before Valentine’s Day, which is actually quite fitting when you consider Leslie’s time honored motto of “ovaries before broveries.” It’s a magical 24 hours dedicated to celebrating the amazingly flawless lady friends in your life that have been by your side all 365 days of the year, because they deserve a day of endless love and appreciation, too. I mean, c’mon. It should be a national holiday, am I right?

Creating a new tradition

There is no wrong or right way to spend your Galentine’s Day, as long as you’re hanging with your gals. The fun part about this holiday is that you have the opportunity to make it entirely your own with fun, creative traditions. Leslie starts her G-Day off with a breakfast feast where she hands out gifts (a bouquet of hand-crocheted flower pens, a mosaic portrait of each of them made from the crushed bottles of their favorite diet soda, and a personalized 5,000 word essay of why they’re all so awesome). An alternative would be raiding your local dollar store of all its pink and red decor for your apartment before inviting all your favorite lady friends over for a pot luck dinner consisting of chocolate, cakes and champagne while blasting Spice Girls on your stereo. And don’t be afraid to bust out those awesome dance moves.

Chocolate Raspberry Sugar Cookie Tart Recipe

For a Galentine’s day-approved treat, channel your inner domestic goddess with this delicious cookie recipe perfect for any one of your friends with a sweet tooth.

First, roll packaged sugar cookie dough into golf-ball sized balls and then roll in granulated sugar. Use a small cup to flatten the balls. Bake at 350 for 11-13 minutes, until edges are set, but not brown.

To make the topping, beat together eight ounces of softened cream cheese, one cup of sugar, and one teaspoon of vanilla. Spread the topping generously on the cookies. Top with fresh berries and drizzle with melted semi-sweet chocolate. To melt the chocolate chips, put chocolate in the microwave (stirring every 30 seconds) then pour into a resealable bag. Snip open one corner for easy drizzling.
