The Perfect Pumpkin Pie (In A Mug)

If fall could be distilled into an edible form, what would it be? We have pumpkin spice lattes, but what about something, like say, pie? Of course, there is pumpkin pie! But I don’t have a oven! How else could I enjoy that wonderful autumn delight? If you have a microwave and mug, then you’re covered. There is a way to fulfill that pumpkin craving.

INGREDIENTS

1 teaspoon unsalted butter14 grams gingersnaps (2 small cookies), crushed into 2 tablespoons of crumbs1/3 cup pumpkin puree1 large egg1 tablespoon milk or cream 2 tablespoons brown sugar1 teaspoon pumpkin pie spice

Melt the butter in mug so your pie doesn’t stick.

Make a “crust” with gingersnap crumbs at the mug’s bottom.

Mix all the other ingredient together in a seperate bowl.

Pour the mix into the mug.

Microwave until you can stick a knife into the pie and it comes out clean. (About 2 to 5 minutes depending on microwave)

Either let it cool or disreagard safety and eat a delicious, pumpkiny mug pie/cake!

Tip: add cool whip or whip cream on top of the pie for a super cute instagram!
