Vegan Chocolate Coconut Balls…On A College Budget!!

Sometimes school can become very stressful and busy. I wanted

to make something that was quick, easy to make, and on the go.

Some days you need a chocolate boost, but without the guilt, the

freshman 15 is real, so I made these 5 ingredient chocolate

coconut balls.

These balls are super easy to make, no food processor is required,

and cheap for those college budgets! Did I mention they were

vegan too?

 

Vegan Chocolate Coconut Ball Recipe-

Ø2 cups of desiccated coconut (.92$)

Ø4 tablespoons maple syrup (1.07$)

Ø5 tablespoons coconut oil (2.45$)

Ø1 teaspoon vanilla extract (.21$)

Ø4-5 ounces dark chocolate (1.12$)

Instructions

1. Add the coconut, maple syrup, coconut oil, and vanilla to a mixing bowl

and stir until it is thoroughly combined and one thick paste.

2. Using your hands, roll the mixture into 2-inch sized balls and place

them on a baking sheet that has been lined with parchment paper.

Place the coconut balls in the refrigerator for 30 minutes to an hour or

until irm.

3. Once the balls have been chilled for some time, place the chocolate in

a small bowl and microwave until melted, usually around 1-2 minutes.

Once the time is up, using two forks roll each coconut ball in the

chocolate until completely covered. Scoop the ball out of the chocolate

and place it onto the wax paper and chill until the chocolate has

hardened

4. Once they have chilled for at least 1-2 hours they are ready to be

served. Make sure to share….or don’t!!

 

Tip: I like to keep the coconut balls in the freezer so when I am

craving something sweet I can grab them and it tastes just like an

ice cream bar, without the guilt!
