It’s almost summertime, collegiettes! We are finishing up projects, writing our last papers, and finals are upon us. The finish line is near! Why not celebrate with one (or all) of these fabulous summer cocktails?
 

Watermelon Margarita

Cut up one half of a watermelon, and puree in a blender until liquefied. Cover and refrigerate in the meantime. Combine 2 cups of the watermelon juice, 6 oz. of tequila, 2 oz. of Triple Sec, the juice of 2 limes, and 2 tsp. granulated sugar in a pitcher. Wet the rims of the glasses with lime and dip in salt or sugar. Pour the mixture over ice for a refreshing drink.

Passion Lemonade

For this Starbucks copycat, start by boiling 16 oz. of water, steeping 2 Tazo Passion Tea bags, adding 2 tsp sugar, and 1/8 tsp vanilla.  Let it sit for fifteen minutes, remove tea bags, and put it in the fridge for an hour.  Pour 8 oz. of the tea mix over ice and add 2 oz. of lemonade. Add citrus flavored vodka for a kick!

Beach Lemonade

In a tall glass with ice, pour in 2 oz. of vodka and 1 oz. of Blue Curaҫao liquer.  Fill the glass with lemonade and top off with a cherry for this spectacular summer cocktail.

Wine Slush

Puree 1 bottle of white Zinfandel and 1 cup of frozen mixed berries in a blender.  Strain and pour into a shallow dish to be put in the freezer for 30 minutes.  Scrape the mixture into a blender and repeat puree and freeze three more times for the perfect slushy!

Kahlúa Mudslide

Put 1 part Kahlúa, 1 part vodka, ½ part Irish cream liquer, 1 part vanilla ice cream, and ice in a blender.  Blend until smooth.  Drizzle chocolate syrup around the inside of the glass before pouring in the mixture for the perfect summer dessert drink!

Frozen Jack and Coke

For this fun adaptation of a classic, combine 2 cans of Coca-Cola or Diet Coke, 6 oz. limeade concentrate and 6 oz. of chilled Jack Daniel’s in a large bowl.  Put it in the freezer overnight and mix it up with a whisk when ready to serve.

Raspberry Limoncello Proseco

Whisk together 3 cups of chilled prosecco and 1 cup of limoncello liquer in a large pitcher.  Add in 1 cup of frozen raspberries.  Keep chilled until it’s time to serve!
