I get it, cooking in college is hard. By the end of a full day of classes, work, extracurriculars, and socializing, I rarely feel inspired to put on my chef hat and whip up some sort of gourmet dinner. But alas, I’m off meal plan and therefore, am forced (much to my dismay) to cook for myself. Since embarking on this cooking journey, I’ve learned that handling and cooking raw meat is not my thing. However, cooking fish actually isn’t too bad and usually turns out to be quite delicious. Here is my go-to (extremely easy) salmon recipe. Enjoy! 

Ingredients: 

  • Salmon 
  • Olive oil 
  • Lemons 
  • Garlic 
  • Salt 
  • Pepper
  • Boxed pearled couscous 
  • Broccoli 

Cooking Instructions: 

  • Pre-heat the oven to 375 degrees F
  • Place your salmon on a baking sheet
  • Dress your salmon with a drizzle of olive oil, lemon juice, and garlic
  • Season with salt and pepper
  • Cut a thin slice of lemon for each piece of salmon and place on top 
  • Disperse your broccoli around your baking sheet as well
  • Season with the same ingredients as you did with your salmon 
  • Cook for roughly 15 minutes 
  • While your salmon is baking, prepare your stovetop pearled couscous–follow cooking instructions on the box 
  • Serve salmon and broccoli over a bed of your pearled couscous with a lemon wedge
