Pinterest Fun Fridays on Foster: Carrot Cake

This week, I wanted to make something that made me feel like I was being healthier, even if I wasn’t. With the carrots, apples, and raisins that go into this recipe, you can easily convince yourself that it’s ok to go for a second, or third, piece. And just like that, the cake was gone. This is definitely a recipe my roommates and I love, and I’ll be making it again very soon.

Ingredients for Cake

  •  ¾ cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups grated carrots
  • 1 ½ cups grated peeled carrots
  • 1 cup raisins
  • ½ cup walnuts (I didn’t use walnuts in my recipe)

I used a different frosting recipe than the one listed on the website. I found it on Yahoo Answers and it worked just fine.

Ingredients for Frosting

  • 1/3 cup butter
  • 3/4 cup brown sugar
  • 1 cup cream cheese
  • 1/2 teaspoon vanilla

Making the Cake

1. Mix together the sugar, oil and eggs until the mixture is slightly thickened. Sift the flours together with the baking soda, salt and cinnamon.

2. Add the flour mixture to the egg mixture. Add the carrots, apples, raisins and walnuts. Stir until evenly mixed.

3. 
Bake in a greased and floured pan – 9″x13″x2”, a bundt type pan, or two round cake pans. Bake at 350ºF for 35-40 minutes if using the 9”x13″ pan.

4. Always check for doneness by piercing the center of the cake with a toothpick. If it comes out clean, it’s done. If you use the round cake pans, check for doneness about 5 to 10 minutes earlier as they are smaller and you don’t want to over bake the cake.

5. Let the cake cool and ice with the cream cheese icing.

 

Making the Frosting

1. I put the ingredients in the microwave for 10 seconds to soften them up, making it easier to mix by hand.

2. Blend all of the icing ingredients together and spread over cooled cake.

I thought this was an awesome recipe. The apples keep the cake from being dry and the raisins added a great texture to the cake. It was a unanimous hit in my house.
