Marathon Monday: Yummy Treats to Cool You Down and Pump You Up

Looking for a cool and refreshing Marathon treat with a kick?  We’ve got you covered.  Super easy and delicious, whip up a batch of these blueberry mojito popsicles (serves 12) Sunday night, and you won’t be sorry in the morning!

 

 

Ingredients:

½ cup (110g) superfine sugar

¼ cup chopped mint

¾ cup (115g) fresh blueberries

3 Tbsp. lime juice

75 ml rum

300ml soda water

12 popsicle sticks

 

Instructions:

1.  Combine sugar, mint, blueberries, lime juice, and 3 Tbsp. water in a saucepan over medium heat and simmer for 1-2 minutes (until sugar has dissolved).

2.  Remove saucepan from heat and cool for 5 minutes.

3.  Add rum and soda water to the infused mixture; stir.

4.  Divide mixture between 12 popsicle molds (can use cups too!).

5.  Cover each mold with plastic wrap and, through the wrap, insert one popsicle stick per mold.

6.  Freeze for 8 to 10 hours (until frozen).

7.  Happy marathoning!
