Instant ramen is notorious as the most common staple in a college student’s pantry. It’s an ever-reliable option: warm, filling, flavorful and edible after three minutes on the stove. With a few toppings, instant ramen transforms from a last-resort college meal into a colorful dish with nutritious value. 

We all know ramen is inexpensive, and this variation is no different. If you opt to eat it without added soy sauce, this cilantro-lime ramen costs $2.45. Soy sauce added, the dish costs $5.17. 

Cilantro-Lime Ramen

Serves 2

1 package instant ramen, flavor of your choice

Juice of 1/2 lime

2 Tbsp finely chopped cilantro

4 Tbsp chopped green onion

2 lime slices

1 carrot, julienned

2 hardboiled eggs, sliced in half 

Soy sauce, optional

Prepare instant ramen, adding only half of the included seasoning packet. Add lime juice, cilantro and green onion. Separate into two medium-sized bowls. Top each with lime slices, hardboiled egg, carrot and soy sauce as desired.
