4 Easy Fall Recipes You Can Make In Your Dorm

Making meals in your dorm can be hard sometimes but thankfully there are some easy fall recipes you can make right in your dorm. All include minimal ingredients and can be made quickly and the only appliances you need are an air fryer, smoothie blender, and refrigerator.

Apple Walnut Quinoa Salad

Dressing:

1/3 cup olive oil

1 tablespoon fresh lemon juice

2 tablespoons apple cider vinegar

1 tablespoon pure maple syrup

2 teaspoons Dijon mustard

1 tablespoon minced garlic

Kosher salt and black pepper, to taste

For the quinoa salad:

3 cups romaine lettuce

2 cups cooked quinoa

1 1/2 cups chopped apples

1/3 cup dried cranberries

1/3 cup crumbled feta cheese

1/2 cup chopped walnuts or any type of nut

Salt and pepper, to taste

Instructions:

To make the dressing, in a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, maple syrup, mustard, minced garlic, salt, and pepper. Set aside.

In a large bowl, add the romaine lettuce, cooked quinoa, apples, dried cranberries, feta cheese, and walnuts. Toss until salad is combined. Season with salt and black pepper.

Drizzle with dressing and toss again. Serve and enjoy!

Pumpkin Energy Bites

Ingredients:

1 cup rolled oats

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/2 cup pumpkin puree

1/4 cup honey

1 teaspoon vanilla extract

1/2 cup dark or semi-sweet chocolate chips

Instructions:

In a large mixing bowl, mix all ingredients together until completely combined.

Refrigerate the mixture until firm enough to roll into balls – about 30 minutes.

Once chilled, roll the dough into 1oz balls. Refrigerate or freeze once again to allow them to firm up before eating.

Pumpkin Spice Smoothie

Ingredients:

1/2 cup pumpkin puree

1/2 frozen banana

3/4 cup almond milk (any type of milk dairy or non dairy will work)

2 tablespoons vanilla protein powder

1 teaspoon cinnamon

1/2 teaspoon pumpkin pie spice

Pinch of ground ginger

Instructions:

Put all ingredients in the blender and blend until smooth. Pour into a glass and enjoy!

Air Fryer Pumpkin Spice Muffins

Ingredients:

1 cup flour

1 teaspoon baking powder

⅓ cup sugar

1 teaspoon vanilla extract

1 tablespoon pumpkin spice

⅓ cup pumpkin puree

1 egg

¼ cup milk

3 tablespoon oil

Instructions:

Preheat the air fryer to 360°F on bake.

Place muffin liners into a muffin tray. Set aside.

In a bowl combine flour, baking powder and sugar. In another bowl combine vanilla extract, pumpkin spice, pumpkin puree, egg, milk and oil.

Slowly mix wet ingredients into dry ingredients, mixing until everything is well incorporated and there are no lumps left.

Divide the batter between the muffin liners, place it in the air fryer basket.

Bake for 10-12 minutes or until a toothpick comes out clean from the centre of the muffin.
