Saltfish and Dumpling WHATTTTTTT

Hey guys! I’m back again with a new recipe. It’s my absolute FAVORITE and it’s so easy as I always say. It’s called saltfish and dumpling. Some of you may know it as codfish, some of you may not know the name but you know what I’m talking about and some of you may just not know but you’re going to learn today! This is sure to impress bae, grandma, grandpa, mommy, daddy, friends, WHOEVER! Just follow these steps and they may just call you foreign.

Ingredients for the Saltfish:

1 Pack of Salted Baccalau (usually what they call it in the supermarket)

1 small green, red, and yellow pepper

Half of a medium sized onion

1 small tomato

Vegetable oil or olive oil

Ingredients for Dumpling:

1 ½ cups of flour

1 cup of water

2 Pinches of salt

½ teaspoon of black pepper

You’ll need:

A large pot to boil your saltfish

A medium sized pot to boil dumpling 

A frying pan

Mixing bowl

Directions:

1.           Fill the large pot half way with water and bring it to a boil. Add your GOOD UP Baccalo in there. (This is so you don’t get high blood pressure from eating it as it is)

2.           You should allow it to boil for 15 minutes and then dispose of the water. Refill the pot with the same amount of water and let that boil for 10 minutes. 

3.           Dispose of the water again and let the saltfish cool down. Once it has cooled down enough for you to touch it without saying OUCH then you should pinch it into little pieces.

4.           Now let’s get to the chopping block. Chop up the onions, peppers and tomato in preparation to make the saltfish.

5.           Let’s pause now and focus on the dumpling! Put the dry flour into the mixing bowl and put your finger in the middle of the flour making a hole. Once the hole is made slowly add water in the hole until it fills to the top of the hole (This is so we don’t use too much water!).

6.           Next, start mixing and kneading the flour with your hands. If it’s still dry or there’s still a fair amount of flour in the bowl add just a tad bit more water! It’s like your making bread just not with all them ingredients!

7.           Let the flour sit for 15 minutes. While waiting, fill your medium sized pot with water and add a pinch of salt (just for flavor).  Once this has boiled, begin to separate the flour into about 4-6 pieces. You can roll them in a ball then press your finger in the middle and flatten them out a little or you can roll them side ways (Totally up to you but your girl like the flat ones!).

8.           Allow the dumpling to boil for about 10-15 minutes and then dispose of the water so it’s not soggy when it’s time to eat it up!

9.           Let’s get to frying that saltfish up! Bring out your frying pan and add about a table spoon and a half of oil. When the oil is hot, add the CHOPPED UP things in there and stir them around a little. It’ll start to smell real good.

10.      Once you’ve done this, add the saltfish in there and stir that around as well! It should only be on the stove for about 5minutes. You just giving it some flavor. Add that black pepper in there, stir it up and WALLAH! A taste from the islands. #CertifiedWestIndian now.
