Collegiette Eats: Superfood Truffles

There really is nothing better than a healthy dessert that tastes too delicious to believe that it’s actually good for you. I love looking for recipes like that on different food blogs, and I recently found one on the blog Deliciously Ella for these energy bites that looked bomb. I went to a potluck the other night for a club that I’m a member of, so I decided to try this recipe out to bring as my contribution to the feast. My breakfast and lunch were pretty standard (oatmeal for breakfast, a tuna sandwich from the library cafe for lunch) and then I ate dinner at the potluck, so for today’s post, I will bestow this amazing recipe upon you instead of boring you with those basic meals.

I adapted the recipe just a little bit by adding some mini chocolate chips and rolling the balls in coconut flakes, and I didn’t use hemp protein powder because I didn’t have any. Whether or not you make these modifications, this recipe is a winner. They taste like rich chocolate truffles! Made with vitamin- and mineral-packed ingredients, like nuts and chia seeds, these bites are healthy but taste indulgent. As healthy as they are, though, you still have to eat them in moderation (which can be a challenge since they’re so tasty!), because the calories from the dates and nuts will add up fast. Have one or two for a snack or dessert. They’re dense, so you’ll be satisfied. 

Superfood Truffles 

Recipe adapted from Deliciously Ella’s “The Ultimate Energy Bites”

Makes 15-20 balls 

Ingredients

  • 1 cup medjool dates
  • 3/4 cup almonds
  • 3/4 cup walnuts
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 2 tablespoons cinnamon
  • 2 tablespoons mini chocolate chips 
  • 1 tablespoon coconut oil 
  • 1 tablespoon raw cacao powder
  • 1 tablespoon water
  • 1/4 cup unsweetened coconut flakes for coating 

Directions 

  1. Place the almonds, walnuts, ground flaxseed and chia seeds in a food processor. Blend for one minute, until a flour forms and the nuts have crumbled.
  2. Add the remaining ingredients, pitting the dates before adding those. Blend for another minute until a sticky dough forms.
  3. Use your hands to roll the mixture into little balls, and then roll them around in coconut flakes to coat.
  4. Place in a bowl and store in the fridge. 

I brought a batch to the potluck in a Tupperware and they were all gone within a minute! I had a bunch of people ask me for the recipe, so I take it they were a success. Whether you make a big batch to share or just store them in your fridge to enjoy throughout the week, these energy bites will definitely be a hit.
